Koufteh is one of the popular foods in Iran. In each side of Iran, they cook it in their own way. In Kashan, Koufte Ab Somagh is a delicious famous meal. When you decide to make it you have to put sumacs in water for a night so the extract of it get ready. Sumac was readily founded in Iran and it had been intended for use as a medicine or as a dye for coloring leathers or Fibers for carpets. It could reduce the blood pressure in hypertensive patients.
Koufteh is made of grinded meat, chickpea flour, and onion. It will be mixed together and rounding it in a baseball size and fried a bit. Then add the extract of sumac and water and let it boil. In Kashan, they add pieces of bread to its water and eat the Koufte and its water separately.
It has a sour-sweet taste and worth to try it for sure.
