A mix of plum, apricot and quince in a food which is called “Yakhme torosh” and a part of its name  means sour, seems to test sour, but actually, because of the palm sap, it tests sour-sweet and even more sweet than sour. This ingredient plus meat and rice made it so nourishing and delicious.

This meal is rarely cooked in Isfahan but there is still women and some restaurants who serve it. If you want to make it your self here is a quick recipe: cook meat with salt and turmeric and water. then add plum and apricot and quince and when it is half cooked add rice. Then crush it and bring out the kernels add palm sap or sugar and cook it for few minutes and it is ready .you can eat it with rice or by bread.
