The most popular food in Isfahan is BEryan served mostly as lunch. It is made of semi-cooked waterboiled meat and sheep's lungs. putted into a special small pan they spray some Safran and the cinnamon on top and put it in the "Tanor", fire oven, to be well cooked the fat make it more greasy and delicious.
The Beryan in Isfahan is totally different from the Indian one. This one served with Iranian bread called "SAngak"; Made in ovens by putting the dough on hot stones, walnut, almond and pistachios slice, basil , vegetables and onion. It has enough energy that there is no need to be eaten with rice like other Iranian foods and making it needs a lot of experience. The most delicious Beryani will not be served at the typicall restaurant but in special places called Beryani.
